BHATURA

INGREDIENTS:

BATURA
1. All purpose flour/Maida- ------2 cups
2. Sooji/Rava------------------------2 tbsp
3. Yogurt----------------------------2 tbsp
4. Sugar------------------------------1 1/2 tbsp
5. Yeast- ----------------------------1/2 tsp
6. Salt--------------------------------1 tsp
7. Oil -----------------------------for deep frying

METHOD OF PREPARATION:

  1. In half cup of warm water, add yeast, 1 tsp sugar and 1/4 tsp salt. Keep aside for a minute.
  2. In a bowl, mix together all the ingredients: maida,sooji,rest of the sugar and salt. 
  3. Mix well all the powders and add the thick yogurt.Now make a small pit/well at the middle and pour in the yeast-water little by little.
  4.  Knead the dough with the oiled hands until smooth.Cover the bowl with a wet cotton cloth and let the dough rest until double volume,abt 1 hr. 
  5. Punch down the dough, knead for a minute and divide into small equal balls. Cover them with the damp cloth. Take the balls one by one and with a rolling pin, roll them into flat but a little thick round.
  6. Cover them with damp cloth once each of them are rolled or fry them at once after rolling into required size. Heat oil in a frying pan/ deep fryer. 
  7. Add enough oil so that the rolled bread can immerse in the oil to get fried and puffed up. When the oil is hot, gently slip 1 bread into the oil. 
  8. Deep fry them into crisp brown. Using a slotted ladle drain the bread and transfer to a paper towel to absorb the oil. 
  9. Serve hot with chole or any vegetable curry.
