BAIGAN KA BHARTA

INGREDIENTS:

Brinjal (baigan / eggplant)------------2 medium sized
Potatoes-----------------------------2 medium sized
Oil-----------------------------------2 tsp
Chopped onions---------------------1/2 cup
Chopped tomatoes------------------1 cup
Chilli powder------------------------1/2 tsp
Turmeric powder(haldi)-------------1/4 tsp 
Chopped ginger(adrak)--------------2 tsp
Chopped green chillies---------------1 1/2 tsp
Salt----------------------------------to taste

Chopped coriander(dhaniya)---------2 tbsp

METHOD OF PREPARATION

  1. In pressure cooker, add the baigan and potatoes and cook for 2 whistle.
  2. Remove and peel the skin of baigan and potatoes and keep in a bowl, drain the extra water and mash it well and keep aside.
  3. Heat oil in a fry pan and add cumin seeds.
  4. When the seeds crackle add the onions and saute till golden brown.
  5. Add tomatoes, chilli powder, turmeric powder, ginger, green chillies and salt and cook for 5 minutes.
  6. Add the mashed baigan and potatoes and cook for2-4 minutes on medium flame.
  7.  Serve hot and garnish with coriander leaves.
